Banana + Date Muffins

Nothing like a quick morning tea whip up with minimal ingredients & minimal dishes. Amen to that I say.
For the gluten intolerant these muffins are gluten free using almond meal instead of a flour.

2 cups of almond meal
1 teaspoon of cinnamon
1 teaspoon of baking soda
3 eggs
2 to 3 ripe bananas
1/4 cup of coconut oil or extra virgin olive oil
1 cup of chopped dates
* Optional - add half a cup of frozen blueberries

1. Preheat the oven to 180 degrees
2. In a large bowl add the almond meal, baking soda & cinnamon.
3. In a separate bowl mix the eggs, mashed bananas, dates & oil.
4. Add wet mixture to dry ingredients and mix thoroughly.
5. Spoon the mixture into the muffin tray (use patty cases if you have them).
6. Bake in the oven for 20-25 minutes
