Banana Bread

I thought I'd give myself a double challenge. To make a gluten free & tasty banana bread without the bulk amount of sugar we tend to get from the coffee shop. 
It was Arabella's (my youngest little babe) 1st birthday earlier in the week so we had a few little friends to pop over for a slice of cake. Given we had an excess amount of ripe bananas & one of our little party guests was celiac I thought I'd try something GF!
If you've got the ingredients its seriously simple & I even got the tick of approval from Guso so that was a big tick, given he's not much on my 'using honey' instead of sugar or coconut oil instead of bulk butter recipes!

3/4 cup of gluten free self raising flour
3/4 cup of LSA (Linseed, sunflower & Almonds)
1 cup of coconut sugar
1/4 cup of extra virgin olive oil
4 bananas, mashed
3 eggs
1 teaspoon vanilla extract

1. Preheat oven to 180 degrees fan forced.
2. Grease loaf tin/use baking paper
3. In a large bowl combine LSA, GF flour & sugar
4. In another bowl beat together eggs, banana, oil & vanilla.
5. Stir egg mixture into dry ingredients. Pour into cake tin & bake for 50-55 minutes. If you're wanting to make it look fancy thinly slice some banana and place as you desire.
6. If the top is looking brown and not yet cooked through place foil over to save from burning.
7. Remove & let it cool.
